Eggless Fluffy Breakfast Pancakes

Yesterday, I attempted to make pancake with pancake mix and adjust it with my own recipe but yesterday the colour wasn't as even. Nevertheless, it tasted nice enough and my mom commented positively too. Thus, today, I felt like eating it again so decided to film the process down. So this shall be my Cook With Me Episode 2!


If you are a vegan reading this, I am terribly sorry as the pancake mix do still contain dairy products to some extent :( BUTTT, you can refer to my previous post on Vegan Pancakes 🥞 I did in Finland 🌟

This time, my pancake was really successful and the colour came out really nice and looks more like pancake hehe! My dad even say that I should make it for the youths at my temple someday haha (should I? XP)


It is really really soft and fluffy, so I would encourage pancakes lover out there to give it a try and a plus point is that this is eggless!!! So you can be more guilt-free while tasting good food XD


Moving on to the recipe, you can just refer to the video haha

Decided to write out the recipe in case you are lazy to watch the video and words talk better to you!


This recipe made about 8-10 pieces of pancake iirc

Ingredients:

1. Pancake Mix

2. Milk/Non-dairy Milk (I used soya milk as usual since I don't really have milk at home)

3. oil (by right most people use corn oil but I only have the rice gran oil so I used that instead)

4. Apple Cider Vinegar (I heard this can help make pancakes softer and fluffier and think it really did)

5. Butter (I used vegan butter)


Method:

1. Add in 1.5 cups of pancake mix into a bowl

2. Next Add in 1.5 cups of milk/non-dairy milk, 2 - 3 tbsp of oil, 1 tbsp of vinegar

3. Mix everything together until you get a smooth batter

4. Melt a tablespoon of vegan buttery spread in a large frying pan over medium heat

4. Spoon the batter into the pan and cook until you see the edges turning bubbles and the edges harden and turning brown (about 3-5 minutes)

5. Flip pancakes and continue to cook until done

6. Serve with maple syrup/ berries/ vegan butter


QUICK TIP: I like to use 2 spatula as it is easier to flip and not get messed up especially since the top of the pancake is still in liquid form to some extent ^^
