Vegan Fluffy Pancakes

So here I am in Finland for Student Exchange Programme and was craving for pancakes However, I am not sure if there will be a suitable pancake mix here so decided to get my own ingredients and make it from scratch. And it turned out soft, fluffy and awesome so here I am sharing my own recipe for the successful fluffy pancakes I made hehe
Tip 1: As a first timer, I think flipping it may be a tough mission so you can consider using 2 spatula and do ensure you make it at low heat.
Serving Size: ~ 8 pancakes
Ingredients:
1. 1.5 cups of all purpose flour
2. 1.5 tablespoon of baking powder
3. 1.5 cups of non-dairy milk (for vegan) or milk (non-vegan)
4. 1 tablespoon of apple vinegar
5. 3 tablespoons organic cane sugar
6. 3 tablespoons organic canola oil
7. 1/8 teaspoon salt
8. Vegan buttery spread for pan
Procedure
1. Mix dry ingredients in a large bowl
2. Add wet ingredients and let rise for about 5 minutes
3. Melt a tablespoon of vegan buttery spread in a large frying pan over medium heat
4. Spoon the batter into the pan and cook until you see the edges turning golden brown (about 5 minutes or so)
5. Flip pancakes and continue to cook until done, about 3 more minutes
6. Serve with maple syrup/ berries/ vegan butter
Tip 2: Sick of the usual pancake? You can add other flavour to your pancake recipe i.e. Add in blueberry to the batter which will eventually burst. Alternatively, instead of adding it into your batter, you can just top it on the batter when you pour it into your pan. This works too and you can decide where you want the burst blueberries to be around:
