Vegetarian Sliced Fish Bee Hoon Soup

During the Circuit Breaker Period, I was tired of studying and doing projects and thus decided to try cooking something new ✨Was looking at what ingredients I have in my fridge and decided to try cooking Vegetarian Sliced Fish Bee Hoon Soup for my whole famz!

My First Attempt


Vegetarian Sliced Fish Bee Hoon Soup

Reviews: My mom commented that the soup alone was good and very 香 but perhaps could have put in more seasonings as it became a bit bland after adding in the Coarse Vermicelli which I failed to take into account when cooking I shall share my recipe below as well as to keep my own record hehe. ☺️ Recipe (3 pax) Ingredients: 1. Coarse Vermicelli (粗米粉)- I used brown rice vermicelli in this case 2. Ginger (老姜) - diced 3. Vegetarian Fish (素鱼) - 9 slices 4. Salted Plum (咸水梅) - 2 Pieces (smashed with a spoon) 5. Evaporated Milk (淡奶) - about half can 6. Chinese Cabbage (白菜) - 4 Big Pieces, sliced into small pieces 7. Tomato (番茄) - 2 Tomatoes 8. Small Chilli 9. Mushrooms (if any) 10. Water - About 3.5 bowls 11. Sea Salt - 1 tsp 12. Vegetarian Mushroom Seasoning (素G粉) - 1tsp 13. Sugar (can add half tsp if you feel that the soup base is missing the sweet taste) 14. Maggi Vegetarian Stock - 1/2 tsp (it will bring out the taste better) Procedures: 1. Fry the Vegetarian Fish, set aside 2. Using the pot that you will be using to boil your soup base, add some sesame oil and the diced ginger, stir-fry for a while to bring out more flavouring. 3. Add in 3.5 bowls of water, together with Chinese Cabbage, smashed Salted plum and leave it to boil. 4. Upon boiling, add in mushroom, tomato and the seasonings until it boil again 5. Upon boiling, add in the evaporated milk and you are done with the soup base 6. While you are boiling your soup base, you can use another pot to fill it with water to boil. Once it is boiled, add in the course vermicelli until it boil. Once it is done, plate it in your bowl and top it with your soup base and the vegetarian fish 7. You can add the diced small chilli as garnish and bring some spicy flavour (if you can tolerate spiciness) Note: You can adjust the seasonings yourself by tasting at different stage accordingly. Do note that it need to be slightly more flavourful when tasting the soup alone as the vermicelli will absorb the flavouring and it may taste a bit blander together with the vermicelli. Something I wasn't sure about was adding the evaporated milk when the fire was still on. I added it too early and my soup became a bit flaky but it still taste good haha so maybe you can consider just adding at the end at stirring for a while and see how it turns out And Congrats you are done!!!
