Vegan Potato/Vegetable Pancake

I decided to re-create my favourite dish I cook in Finland: Potato & Vegetable Pancake


Potato Pancake

This was supposed to be a purely potato pancake but I decided to add some vegetable to it to make it more flavourful. Here' I will be sharing my recipe to this:


Ingredients: (3 pax, 12-ish pc)

1. 2 potatos sliced into very thin shreds (~2-3 cups)

2. 4 pieces of cabbage (sliced into thin shreds)

3. 4 fresh button mushrooms

4. 1 cup all purpose flour/plain flour

5. 9 tbsp non-dairy milk (I used soy milk here)

6. 3 tbsp corn starch

7. 1.5 tbsp salt

8. 1 tsp baking powder

9. Vegetable oil (for frying)

10. optional: Vegan cheese shreds (1/2 - 3/4 cup)


Steps:

1. Peel the potato and slice them into shreds. Soak it into water with a pinch of salt

2. Slice the cabbage into thin shreds too. Slice the mushrooms

3. Put them all into a big bowl. Add the flour, corn starch, salt, baking powder and cheese (optional)

4. Add in the non-dairy milk and mix them well

5. Heat up the pan with some oil.

6. Add a spoon of your mixture into the pan and spread them as even as possible.

7. About a minute or so, try flipping it

8. It is ready to be served once both sides are golden brown


Reviews:

I am quite satisfied with my results hehe and my dad praised that it is flavourful. One thing to note is perhaps the control of the heat and fire as too little hit may make the pancake absorb the oil easily and become oily while too much heat can make it burnt easily.


But yep your pancake is thus done and ready to eat!
