Eggless/Vegan Apple Tart

Finally found some time to update the blog hehe


With the start of Phase 2, my friends and I decided to have a picnic at the Botanics Garden in our small group of 5! And each of us have to bring something to share and I felt like baking but not sure what I should bake :(

Suddenly I thought of my 3rd place Apple Tarts that I compete in some Home Economics Competition in Secondary School. It's been about 5 years since I last made it I think so I decided to try it again and my friends sort of became my guinea pigs again oops


As my friends aren't vegan, so the version I made was not entirely vegan due to the custard powder being used but it can be easily replaced with other items too to make it vegan. As its been a long time since I last made it, I think that the taste came out not bad but it was a bit more dry than usual so perhaps a note to myself is to add a bit more water in the future :)


The Recipe (16 small/9 big)

Pastry ingredient:

Plain flour 250g

Butter 125g

Cold water 3tbsp

Custard power & water mix 2tbsp (2tbsp) + (3tbsp)

Artifical vanilla flavour 1tsp

Moulds (big) 9pcs


Filling:

Green apples 4pcs

Brown sugar 60g

Cinnamon power 1/2tsp


Method:

(1) Beat the butter first. Sift the flour onto a big bowl, rub in the butter to form fine crumbs and make a well in the center. Add in cold water. Add in the custard powder mixture (2tbsp) as well as vanilla essence/flavour. Knead into soft dough. Chill in a refrigerator for at least 1 hour.

(2) Remove the skins & seed of the green apples & slice them.

(3) Heat 20cm pot. Add in butter & apples & mix well, cook for about 5mins. Add in sugar & cinnamon power & mix well. Cook until sugar melts, before extinguishing flame. The apple should have a bit of transparency to it and be soft instead of crunchy

(4) Return the dough to the floured table & roll into a thin 1/2 inch sheet. Cut out 2 large rounds & press 1 pcs into a mould. (Fork holes before filling & cover) Put in some apple filling, place the 2nd pcs on top. Press the edges together tightly using your finger tips,& make a crisscross patterns on top using a blunt knife taking care not to break through the pastry. Pierce a hole in center of the pie to allow the air to escape.

(5) Mix 2tbsp of custard power, 3tbsp of water, 1tbsp of honey & 1tsp of cooking oil well. Apply the mixture using a brush on the pastry top surface.

(6) Allow the oven to be heated up for a while setting temperature at 170 degrees Celsius. Bake the apple pie for approximately 20mins till it appears golden.

(7) Remove the baked apple pie from oven & it is ready to be served.
